Cá trê làm sạch, rửa với nước pha 1 muỗng cà phê muối, để ráo. Sau đó, dùng que xiên, xiên vào con cá.
Sả đập dập, băm nhỏ. Củ riềng, gừng gọt vỏ, giã nhỏ, cho ra chén.
Cho cá trê lên đĩa, thêm sả, củ riềng, gừng cùng gia vị 1 muỗng canh cơm mẻ, 2 muỗng canh mắm tôm, 1 muỗng cà phê nước mắm, 1/2 muỗng cà phê tiêu, 1 muỗng canh đường trắng, trộn đều, để khoảng 5 phút.
Cho cá trê lên khay nướng, đặt trong lò, nướng khoảng 30 phút ở nhiệt độ 220 độ C.
Lấy cá ra, quết 1 muỗng canh dầu ăn lên thân cá, cho lại vào lò, nướng thêm 5 phút là được.
Bày cá nướng ra đĩa và thưởng thức. Thịt cá mềm, thơm vị riềng, mẻ rất hấp dẫn, lôi cuốn.
